I'm might have to stop making videos for awhile or at least cut down uploading from 10 videos between my 2 channels to 2 a week or less

Sometimes a break is what you need to succeed. Do what you think it's necessary and let it be more of a hobby and less of a job!
Honestly I think 1 video a week is still fine to keep your subscribers around, sometimes it can be good to keep some time in-between videos to allow people time to watch them all. That being said don't do what I do an occasionally upload once a month or so
If you are planning to break away from your current upload schedule it might be a good idea to make a video about that. There is no need to explain yourself since you should be able to stop/quit whenever you want but mentioning it really quick never hurts when you are planning to come back!
