Blue is fully monetized with all add formats. You're earning max money if it is blue. Grey means non monetized. It may have copyrighted content.

Go to YouTube Dashboard -> Features -> Enable Monetization The only reason for it not to be there is if you haven't verified your channel.

I used Adobe Premiere Pro CC for montages on my gaming channel.
